With only three more days left in Banff, including today, we had a lot of hiking to get under our belts, so it was no surprise we decided to head to the Johnston Canyon Trail this morning.
Johnston Canyon Trail
We got there quite late, having had a lazy morning and our hike started at around 11 AM. I do not suggest this for future hikers! Going early is key as this hike was jam-packed. We were told to hike with masks due to the ongoing pandemic (and rightfully so in mid-summer of 2021!). However, we quickly realized that most hikers sadly preferred to ignore this recommendation.
The hiking trail itself consisted mainly of some sort of very long and narrow bridge courting the canyon closely, allowing one to admire the views at a close-enough, but safe distance.
The waters were very blue and the moments of quiet in between hoards of people coming to hike were a blessing and allowed us to fully admire the canyon, the waters, nature and the creatures whose home this was.
A certain cave is usually available to visit during this hike and pictures I’d seen of it were stunning. However, it was out of bounds for our hike this year due to needing to protect the birds nesting in the area. Another year, perhaps? If I were to go back to Banff, and I clearly wish to, I’d visit this place again in a heartbeat to see the cave.
Supper at Nourish Bistro
When we were done with our hike, we had supper at Nourish Bistro. I highly highly recommend this place. It’s a vegan/vegetarian restaurant where I’ve had some of my most delicious vegetarian meals all restaurants combined. I always ask the waiters what they recommend in their restaurants, and took the kind waiter’s recommendation here.
We shared 3 items from the menu so as to be able to taste as much of a variety of foods as possible: their world-famous nachos, the gyoza and the wild mushroom ravioli. The restaurant combines fruits and vegetables in savoury meals. The fruits gave that perfect oomph that the recipes required and I couldn’t have been more pleased!
